Small Plates, Craft Beers & Holiday Cheers
We have just put the finishing touches on our winter season menu at Vail Cascade and itâ€™s been an incredible process! The new Small Plates menu is designed for aprÃ¨s ski or lighter dining while providing a full culinary experience without consuming an overwhelming amount of food.Â Pair these tapas-style dishes with a wide variety of craft beers for the perfect combination! The culinary team has been working extremely hard on a new exciting adventure! Our new craft beer initiative is a project near and dear to so many of us at Vail Cascade and weâ€™re pleased to offer this one-of-a-kind selection at Fireside Bar and Atwater on Gore Creek, starting in mid-January.Â We recently visited Breckenridge Brewery in Denver and Avery Brewing CompanyÂ in Breckenridge for an educational experience.Â It was a real eye opener to sit across from a person who has the same thought process towards a beverage (beer) as culinarians do towards food.Â Â
For a few pairing suggestions, try our Saku Tuna Tacos with Mirror Pond Pale Ale or the Moroccan Lamb Meatballs with the Sam Adams Winter Lager.Â If you are looking for a dessert, try the Chocolate Mousse Cake with Three Philosophers. No self respecting Chef could resist the temptation to suggest the Pork Belly Lettuce Wraps paired with Hoegarrten.
