Atwater Beer Buzz November 30


Vail mountain is open, the Thanksgiving turkey has become leftovers, we had a wonderful weekend with Peter Bouckaert from New Belgium and Andy Brown from Wynkoop, and the Holiday/Winter beers are rolling in! It’s officially the best time of the year for beer, in my opinion.

Our guests were delighted to visit with Peter & Andy last Friday and drank everything they brought to sample to the very last drop! It was quite a selection of samples, from Wynkoop’s Pumpkin Ale and 2012 Brewjolais Nouveau collaboration to a variety pack of the Lips of Faith series from New Belgium. The Small Plates & Craft Beer Pairing event was a smaller group of Thanksgiving escapees this round, and every pairing presented by the Atwater culinary team was well-received. “Best pairing” as voted by many was the 2011 Brewjolais Collaboration paired with seared venison lion, black pepper biscuit, strawberry balsamic glaze and tiny basil. However, there were also some enthusiastic votes for the New Belgium Peach Porch Lounger paired with a jumbo lump crab cake, mandarin orange, pickled onion, pea tendrils and saffron foam. Delicious!!

As fast as we complete our Thanksgiving weekend, we’re looking forward to our next Brewmaster’s Weekend on December 7 & 8 with Dave Thibodeau from Ska Brewing Co. Watch the Vail Daily next week for Dave’s Ale with Altitude column in preparation for his weekend at the Cascade! The beers selected for our Small Plates & Craft Beer Pairing adventure with Dave are as follows:

I will certainly post the menu as soon as it’s available, and it promises to be tasty! To summarize our Brewmaster’s Weekend schedule, Friday 12/7 will be our Meet the Brewmaster event in Fireside with open sampling from  4 – 7pm, and Saturday 12/8 will be Small Plates & Craft Beer Pairing starting at 5pm. There is no cost for Friday’s tasting, and Saturday’s pairing event is $25/person including beer samples, small plates and a tasty guided tour by both the Brewmaster and the culinary team from Atwater on Gore Creek, our Vail restaurant. For reservations, please either email me back or call Atwater (970-479-7014). We’ll see you there!

Our Wednesday Night Craft Beer Tastings continue to roll along successfully, and with Vail Mountain opening this weekend they will certainly step up a notch! Thanks goes to Jess Draper with Upslope Brewing Co. for bringing her lineup of craft beers, including Upslope Craft Lager, Upslope Pale, Upslope IPA and Upslope Brown, with an additional Christmas Ale treat for our guests!  Next week we’re looking forward to offerings from Great Divide Brewing Co. as represented by Neal Bocksch. The time for the Wednesday tastings will change for ski season to 4:30 – 6:30pm, in order to hit that official “après ski” zone.

Ski Conditioning at the Aria Club has officially wrapped up, and we’re all in great shape to play on the mountain…and après with the best of them! Much appreciation to all of our craft beer sponsors, including New Belgium Brewing Co., Breckenridge Brewery, Odell Brewing Co., Great Divide Brewing Co., and – to wrap it all up last night – Ska Brewing Co. The ski conditioning survivors sampled Ska Pinstripe Red, Euphoria Pale, Modus Hoperandi IPA and Steel Toe Milk Stout with the culinary spread from Atwater on Gore Creek. Thanks again to all who participated!

Atwater Beer Buzz November 9

Greetings from the land of tastings and menu development! 

We just spent the last hour and a half brainstorming for the New Belgium/Wynkoop Brewmasters’ Weekend Small Plates & Craft Beer Pairing menu, and it’s interesting to listen to the ideas that take flight and then change into something completely different. I can certainly tell you that the wine-esque beers generate a completely different conversation than any of our traditional beer styles do. Intriguing.

At any rate, I will have that menu for you in next week’s email, and none too soon! as Thanksgiving sneaks up on us. To recap the event briefly, Peter Bouckaert and Andy Brown will be our featured Brewmasters for November 23 & 24th, and you can join them for a complimentary tasting "Meet the Brewmasters” event on Friday evening from 4 – 7pm in Fireside Bar to open the weekend. Then on Saturday from 5 – 6:30pm we will host a formal four course tasting of beer & food pairings in Atwater. This session will be led by both the Brewmasters and the Atwater culinary team, each describing the components and pairing philosophy of the successive courses. Cost for Saturday’s session is $25 per person, and you can make reservations by either emailing me back or by calling Atwater at 970-479-7014.

We are also looking forward to a fun weekend with Dave Thibodeau of Ska Brewing Co from Durango! Dave will be joining us for the December 7 & 8th Brewmaster’s Weekend, and I’m expecting to receive his beers of choice for a similar menu brainstorming session very soon. More details there as I have them, but you can go ahead and put it on your calendar!

Yesterday’s Wednesday Night Craft Beer Tasting was an ‘out of this country experience’ as Tom Jasko from Merchant du Vin brought special Belgian, German and English beers for us to try. Guests were special fans of the Rochefort 10 and Lindemans Framboise, but were also delighted to sample Orval, Westmalle Triple, Ayinger Celebrator Doppelbock, and Samuel Smith Oatmeal Stout. Tremendous thanks to Tom, and we hope you make it back in time for your hockey game! Next week we’re excited to try an array of beers from Upslope Brewing Co, and I’ll let you know what Jess is bringing via the Atwater on Gore Creek Facebook page.

The Destination Dish: Cranberry Tabbouleh Salad Recipe

Destination Hotels & Resorts challenges our chefs across the country to take part in The Destination Dish. Each month, Destination® Hotels & Resorts selects one ingredient and each chef must create a recipe using the chosen ingredient and feature it in their menu that month.  This month, the chosen ingredient is cranberries

Vail Cascade, a Vail mountain resort offering spacious hotel guestrooms and premium condominium rentals in Vail, is pleased to feature this yummy Cranberry Tabbouleh Salad created by Jay Spickelmier, Chef at our Vail Colorado, signature creek-side restaurant Atwater on Gore Creek

Tabbouleh is a Middle Eastern dish made traditionally of bulgur wheat, finely chopped herbs, and spices. Tabbouleh is often served as an appetizer, a salad, or tapa.   Tabbouleh is thought to have originated in Lebanon, where it is the national dish, but it is now enjoyed all over the world, particularly in vegetarian or vegan cuisines.  In our Tabbouleh dish, we use qunioa which is  a great substitute for the traditional bulgur; being very high in protein, it makes the salad healthier, alkalizing and gluten-free, plus a bit more filling.  This salad will enliven your tastes buds and it’s available all month long at Atwater. 

Take your taste buds on a sensory journey as you savor our creative American cuisine paired with an eclectic list of craft beers at Atwater on Gore Creek. Our Cranberry Tabbouleh salad is the perfect complement to any meal! 

We hope you enjoy the recipe for this delightful salad!

Cranberry Tabbouleh Salad
Servings: 6 to 8

Recipe Ingredients:

Tabbouleh salad

1 # Fresh Cranberries, sliced in half
1 cup organic black quinoa, boiled until tender
1 cup organic white quinoa, boiled until tender
1 cup pickled ginger, chopped
1/2 cup salt roasted golden beets, peeled and small diced
1/2 cup chives, sliced
1 cup dates, minced
1/2 cup shaved carrot
1 Tbs honey
1 Tbsp. olive oil
¼ lemons 

Cranberry Sauce
2 cups whole cranberry
1 cup orange juice
½ chipotle pepper
1 cup red ver jus
½ cup maple syrup
1 pinch ground cumin
½ cup cilantro
Salt and pepper tt 

Recipe Directions:
Mix the Tabbouleh salad ingredients together and season to taste.

For the Sauce
Simer everything, but the cilantro for ten minutes, blend until smooth and season to taste.

Optional Garnish
Sunflower sprouts

Greetings from frosty Vail! 

The slopes are being gradually covered with lots of wonderful white stuff, and we’re looking forward to being able to play on the mountain again! Ski Conditioning is going strong at Aria, and our craft beer sponsors are fuelling the participants’  athletic determination with goodies via raffle and periodic parties. Thanks again to Breckenridge Brewery, New Belgium Brewing Co., Odell Brewing Co., Ska Brewing Co., and Neal from Great Divide Brewing Co. who hosted last night’s event. Everyone loves our craft beer participation! 

We also have great news to share about our Wednesday Night Craft Beer Tastings……they are going to continue through ski season!  Very exciting to show success on all levels with this program, and once again thanks goes out to each and every brewery for their support. Everyone who has been available and willing to sample their wares through off-season will now also have the chance to visit with all of our guests & locals through the height of ski season, which is absolutely a win for everyone across the board.

Last week Dylan from Oskar Blues brought Dale’s Pale Ale, G’Knight Imperial Red Ale, Ten Fidy Imperial Stout and Deviant Dale’s IPA for everyone to sample, and last night Erich with Boulder Beer brought a variety of things from his arsenal as well. Guests & locals tasted Hazed & Infused, Sweaty Betty, Flashback, Never Summer, Mojo IPA, Freshtracks and a Wine Barrel Aged Saison over the course of the two hour tasting. Many thanks to Dylan and Erich, and next week you can look forward to a variety of imported styles from Tom Jasko with Merchant du Vin Importers. Tom will mix it up with many different breweries, mostly European, and I’ll post the list of beers on the Atwater on Gore Creek Facebook page as soon as I know them. Remember: Fireside Bar, Wednesday, 5:30 – 7:30pm, Free tasting, $2 pizza slices from Atwater.
