Greetings from crunchy Vail!

Let the snow begin! We’ve had our first couple of “scrape your windshield” mornings, and snow on the deck. It’s more of the icy, crunchy kind to be sure, but it’s white and it’s encouraging! 

Our Atwater Sweepstakes is underway. We'v attached the information below, complete with QR code. Wednesday Nights are turning into a great evening for us with our weekly complimentary craft beer tasting and $2 pizza slices! Josh poured some terrific Left Hand treats last night to a steady stream of interested and happy guests and locals. They tasted the Left Hand “flagships”, Sawtooth & Milk Stout Nitro, as well as Warrior Fresh Hop and Wake Up Dead Imperial Stout. Congrats to Left Hand for their Sawtooth medal at GABF, and thanks to Josh for being here last night to support our programming!

Next Wednesday you can look forward to Oskar Blues goodies from 5:30 – 7:30pm as well as those tasty pizza slices. Dylan will be bringing up the following beers from their Lyons/Longmont world for your sampling pleasure: Dale’s Pale Ale, G’Knight Imperial Red Ale, Ten Fidy Imperial Stout and Deviant Dale’s IPA. Join us! 

New Belgium’s Peter Bouckaert and Wynkoop’s Andy Brown will be joining us for the next Brewmaster’s Weekend, and we're happy to share with you the 4 beers that will be included in their Small Plates & Craft Beer Pairings on Saturday, November 24th.  Our staff is excited to design a really cool menu around these diverse and interesting beers, and you can sample them with the Brewmasters & our culinary team. Event will begin at 5pm and run until about 6:30pm. Reservations are available by calling 970-479-7014, and the cost is $25/person.

Two of the beers that will be presented are collaboration beers called Brewjolais Nouveau, the first brewed in 2011 and the other more recently in 2012.  These are brewed around the time of the grape harvest, and are interesting, complex beers. The third is Wynkoop’s Belgorado IPA, and the final beer is New Belgium’s Peach Porch Lounger, a collaboration with G Love that is part of their Lips of Faith series. Once a menu has been finalized we'll share it with you via our blog and and Facebook.

On to this week’s current updates! There have been no changes to the craft beer list, although there are several waiting in the wings for the last few bottles to move through from their predecessor.

The Destination Dish: Apple Pie Recipe

Destination Hotels & Resorts challenges our chefs across the country to take part in The Destination Dish. Each month, Destination Hotels & Resorts selects one ingredient and each chef must create a recipe using the chosen ingredient and feature it in their menu that month.  This month, the chosen ingredient is apples. 

Vail Cascade, a Vail mountain resort offering spacious hotel guestrooms and premium condominium rentals in Vail, is pleased to feature this scrumptious dessert, Cinnamon Apple Pie with Sweet Potato Bourbon Ice Cream created by Adam Smith, Lead Line Cook at our Vail Colorado, signature creek-side restaurant Atwater on Gore Creek. This dish is sure to enliven your tastes buds and is available all month long at Atwater.

Take your taste buds on a sensory journey as you savor creative American cuisine paired with an eclectic list of craft beers at Atwater on Gore Creek. Our Cinnamon Apple Pie with Sweet Potato Bourbon ice cream is the perfect complement to one of our craft beers. You’ll be under the influence of an indulgently paired craft beer and this sweet confection.

Recipe:
Cinnamon Apple Pie with Sweet Potato Bourbon Ice Cream

Servings: 6

INGREDIENTS
Ap Flour, 1 kg
Butter, 500 gr             
Sugar, 300 gr                              
Whole Eggs, 2
Cold Water, 100 ml                      
Salt, 5 gr                                                                

Apple Granny Smith Applies, Peeled-Sliced, 6
Flour, 2 t
Butter, 3 t   
Brandy,1 t  
Sugar, 1.25 cups    
Salt, 2 pinches        
Cinnamon, 2 gr           
Nutmeg,1 gr             
Lemon Juice. .5 ea                  
Gran Mariner, 1 t                             

Half and Half, 1 qt                  
Sugar, 200 gr       
Cinnamon Stick Toasted, .5 ea   
Nutmeg, 1 pinch 
Egg yolks, 10 ea              
Salt, 1 pinch
Bourbon, 100 ml
Sweet Potato Puree, 300 gr     

Crust
Sablee flour and cold butter, add sugar and salt. Next add the eggs and the incorporate water until forms a dough.  Do not add all of the water at once. The finished dough should be eyeballed for appropriate hydration. Wrap in plastic for 30 minutes in the refrigerator. Portion and roll out to the size of a pie tin.

Pie
Toss peeled sliced apples with brandy, sugar, salt, cinnamon, nutmeg, lemon juice, Gran Marnier.  Use ½ the flour to dust the bottom of the pie crust, and then fill with the coated apples without adding the liquid.  Dust the top of the apples with flour and add the butter so evenly dispersed. Cover with top crust and bake for 25 minutes at 350 deg F.

Ice Cream
Heat half and half  with cinnamon and nutmeg. Add sugar, salt bourbon, and sweet potato puree to egg yolks and mix until incorporated.  Next add the half and half into the egg yolk mixture and place back on gentle flame until nape. Strain and spin in the ice cream machine until desired over run is achieved

Finish
Sweet Potato Chip. Chocolate Pearls

Optional Garnish Ideas
White Chocolate, Apple Chip, Caramel, or Marshmallows

Vail Cascade Resort & Spa is Getting Ready for the Winter months and Keeping Warm with Atwater's Green Chili Recipe in Vail

As the majority of the United States is enjoying football weekends, upcoming baseball playoffs, and the expected colder winter temperatures, I wanted to share something that warms me on those chilly fall and winter days. This has to be one of my favorite dishes on the Atwater on Gore Creek's menu at the Vail Cascade Resort & Spa

CHEF TODD BEMIS’ GREEN CHILI RECIPE

Ingredients:  

  • 2 cu of diced onions
  • .25 cu of chopped jalapeños
  • 3 garlic cloves
  • 2 qts of chicken stock
  • 1 stick of butter
  • 4 oz of masa
  • 20 oz of green chili’s
  • 20 oz of diced tomatoes
  • 20 oz of white hominy
  • 20 oz (or 1.25 pounds) of chicken
  • 1 Tsp of Worcestershire sauce
  • 1 tsp of cumin
  • 1 tsp of salt
  • 2 tsp of chili powder
  • .5 oz of Lime Juice
  • 2 Bay leaves
  • ¼ tsp of cinnamon ground
  • ½ cup fresh corn shucked (can use canned and drained in a pinch)
  • ¼ cup cooked chopped bacon
  • 20 oz of white beans (drained)
  • 1 tbsp roasted green chili’s
  • 2 oz of cilantro 1 oz of parsley
  • 2 oz of chives  

Directions:

  • Sweat the onions, garlic and jalapeños in the butter. 
  • Season them with salt & add the masa to make a roux. 
  • Cook the roux for 10 minutes and add all of the warm chicken stock and green chili’s. 
  • Cook then blend until smooth. 
  • Add the chicken, seasonings, spices, corn, bacon tomatoes and the other can of chili’s, beans and hominy. 
  • Let cook for approximately 1 hour. 
  • To finish, puree hers with can roasted chili’s and add to the soup.  Season to taste. 
  • Garnish with Pico de Gallo and serve.

Enjoy watching your favorite team, in front of the fireplace with your loved one or around the dinner table with family and friends. All I can is is: YUM!! Greetings from the Pumpkin Patch!

We’re learning how much our guests like pumpkin beer, so we’re keeping it coming! More pumpkin back into this week’s Friday Night Featured Flight, and we’re keeping an eye out for the legendary Avery Rumpkin which should be hitting the loading dock anytime…

 

Remember that Atwater on Gore Creek is offering 50% off all Large Plates & Pizzas through the Fall season, and that Aria Ski Conditioning begins next Monday the 8th. Odell Brewing Co. is sponsoring the kick-off party after the Monday evening session, so come on out and work out with an Odell reward. The Ski Conditioning party begins at 7:00pm, and is open to participants and Aria Club members.

Our Wednesday Night Craft Beer Tasting with Sierra Nevada Brewing Co. was a steady stream of locals augmenting our Fall group meetings & events that are in house. Jeff brought a fun selection of Sierra Nevada goodies, including BRUX, their collaboration with Russian River Brewing Co. To round out his selection were Ovila Abbey Dubbel, Tumbler Brown Autumn Ale and Sierra Nevada Stout. The Stout got special treatment with an adventurous dollop of whipped cream, which turns a tasty beer into dessert!

Next week’s Wednesday Night Craft Beer Tasting will feature our local Bonfire Brewing Co. from Eagle, CO. Andy and Matt haven’t told us yet what they are planning to bring, so watch the Atwater on Gore Creek Facebook page for more intel as we know it. Mark your calendar for Wednesday, 5:30 – 7:30 pm in Fireside, and plan on $2 slices of our new Atwater pizzas: Herbivore, Carnivore & Omnivore.

Vail Cascade, a Mountain Resort, Commemorates Veteran’s Day with a Complimentary Meal & Special Rate

This Veteran’s Day, the Vail Cascade Resort salutes the men and women that have dedicated their lives to serve and protect the red, white and blue. General Manager, Brett Schoenfield invites all active and retired service personnel to come to Atwater on Gore Creek, the hotel’s signature restaurant, on Nov. 11 to enjoy a complimentary meal and magnificent views of Vail’s fall foliage. Additionally, military interested in an extended getaway can take advantage of $99 rates starting rate now through Nov. 15, a savings of up to 40 percent.     

Soldiers know firsthand that a home cooked meal and a restful night’s sleep are hard to come by when deployed. While Schoenfield recognizes that the Vail Cascade Resort cannot single handedly make up for the number of missed home cooked meals, late nights or early risings, the hotel aims to do their part to narrow the margin one meal and one room night at a time.  

“We are grateful to all military men and women, past and present, that have selflessly given of themselves to serve and protect our country, said Schoenfield. “We are grateful for the time they've served on our behalf and it is now our turn to serve them.”  

A Hospitable ‘Thank You’

The Vail Cascade Resort commemorates Veteran’s Day with two special promotions available to all active and retired military personnel. Valid military ID is required for both promotions.
