Atwater Beer Buzz September 13

Greetings from the golden cooler!

Fall is happening…the nights are crisper and everything is turning gold as we watch! What a beautiful time of the year, and all the more so due to the amazing seasonal craft beer offerings! We’ve got Elysian Night Owl Pumpkin Ale and Avery The Kaiser Imperial Oktoberfest in bottles on the list now, Samuel Adams Octoberfest on draft, and Ayinger Oktoberfest & Dogfish Punkin’ Ale scheduled to rotate onto the list. There are so many other amazing options available…and if we move through these, we’ll bring more on board!

But before we get into more upcoming events, we'd like to share some of the highlights of our Colorado Brewers Guild Brewmaster’s Weekend. It was absolutely fantastic, and all attendees were excited about the diversity of the craft beers offered by Trinity, Three Barrel and Rockyard… as well as the incredible creativity of the brewers. It was an unprecedented opportunity at the Vail Cascade to try craft beer from three different Brewmasters, plus a diverse offering from other Colorado breweries via John Carlson of the Colorado Brewers Guild. 

The Brewmaster’s Dinner on Saturday evening was beautifully set up in a private room, so attendees had the luxury of mixing and mingling while sampling from the elaborate hors d’oeuvres station. The commentary between the seated courses was entertaining and informative, and John Carlson discussed the pairing for each previous course with the group before moving onto the next. The Atwater culinary team really rocked out the pairings & service; quite a lovely dinner. Thank you so much to Jason Yester from Trinity, Jim Stinson from Rockyard and John Bricker from Three Barrel for joining us and bringing their fantastic beers. Double-thanks to John Carlson for organizing everyone and making the event possible. Everyone is looking forward to a repeat of this dinner and perhaps we’ll expand capacity to more than 30 people as this one was so well-received with a waiting list. 

We’re rolling out our Wednesday Craft Happy Hour next Wednesday, September 19th in Fireside Bar with Breckenridge Brewery! Come join us for two complimentary hours of tasty Breckenridge beers, perfect to pair with our small plates, pizzas, or a fantastic dining experience. Next on the event list for the Fall season is the Great American Beer Festival, and we’re rolling out our Brewmaster’s Weekend Sweepstakes! There will be a drawing prior to each Brewmaster’s Weekend, and the winner will receive a complimentary night at the Vail Cascade and two seats for our Small Plates & Craft Beer Pairing with the Brewmaster and Executive Chef Todd Bemis.  You’ll enter to win on our online sweepstakes page, and can choose the event(s) that you would like to be eligible for. Everything should be set up next week for my email, and we'll send you all copies of the information. The Sweepstakes runs through our event in April, so we’ll be running it for almost all of ski season. 

Now – for this week’s update! As mentioned earlier, we have added Elysian Night Owl Pumpkin Ale to our list, and are looking forward to more seasonal goodies as they roll in.  We have also started the new draft rotation with New Belgium 1554, so you’ve got new blood in both of our Friday flights!

CBG Brewmasters’ Weekend + Vail Oktoberfest = Heaven!

It's a craft beer lover’s heaven for sure. And boy, oh boy, do we have treats in store for you this weekend! The Atwater culinary team has offered to create an interactive dining experience with an open kitchen for our guests at Saturday Night’s Brewmasters’ Dinner. So back to the math, add this really cool opportunity  to the amazing craft beers and dialogue that you will have with the Chef and Brewmasters - and you get an amazing dining experience! Menu is attached, and I’ll print it below for your convenience as well.

John Carlson, Executive Director of the Colorado Brewers Guild, is bringing three (3!) innovative brewers up for this amazing weekend! You will have the opportunity to sample wares from Trinity Brewing Co. in Colorado Springs, Rockyard Brewing Co. in Castle Rock, and Three Barrel Brewing Co. in Del Norte, CO. Each respective Brewmaster will be present too, and are listed on the accompanying flyer. 

As usual, there are two different events planned for your enjoyment. Friday from 4 – 7pm in the Fireside Bar we will host a “Meet the Brewmaster” event with complimentary open sampling and visiting all around. On Saturday you will be part of an elite group of 30 for the culinary experience mentioned above. Dinner begins at 6pm in the Cascade Ballroom, and you will be treated to a 5 course formal dinner, complete with commentary from both brewmasters and chefs in a private dining room setting. Seating is limited, and reservations are highly suggested. Cost is $50 plus tax and gratuity per guest, and you can reserve your seat by emailing Laura or by calling 970-479-7014.

In other exciting news, I am pleased to announce new craft beer programming for our Fall Season. Each Wednesday night from 4:30 – 6:30pm in Fireside we will be hosting a complimentary Craft Happy Hour featuring a different brewery or importer. Our first Wednesday Craft Happy Hour on September 19th will feature Breckenridge Brewery, and you’re welcome to stop by at any time to visit with Katie, sample some great Breckenridge craft beers, and perhaps have a lovely dinner on the deck in Atwater on Gore Creek or try pairing some of our delicious Small Plates with your craft beers. These events are open to guests of the resort and to the general public, so come on by and join us! 

If you’re keeping track of the Great American Beer Festival happenings, you might be interested to know that Visit Denver is running a promotion that includes free tickets & airfare. Here’s a snippet of their press release, and you can find them for more details using the below info:

The Destination Dish: Mushroom Recipe

Destination Hotels & Resorts has challenged our chefs across the country to take part in The Destination Dish. Each month, Destination Hotels & Resorts selects an ingredient and challenges our chefs to create a recipe using the chosen ingredient. This month, the featured ingredient is mushrooms.

Whether you use them in a side dish or as the main event, mushrooms add taste, compliment any dish, and provide so many options for delicious recipes. Mushrooms provide vitamins such as thiamine, riboflavin, niacin, and biotin, so they are also super healthy! Mushrooms come in a variety of types and can be utilized fresh, sautéed, marinated, seasoned, grilled, stuffed or baked. 

Vail Cascade, a Vail mountain resort offering spacious guestrooms and premium condominium rentals in Vail, is pleased to feature this mouth-watering side dish, Wild Mushroom Risotto, created by Jay Spickelmier, Sous Chef at our Vail Colorado, signature creek-side restaurant Atwater on Gore Creek. The dish is sure to enliven your taste buds and is available all month long at Atwater.   

Take your taste buds on a sensory journey as you savor creative American cuisine paired with an eclectic list of craft beers at Atwater on Gore Creek. This mushroom risotto is the perfect compliment to our 20 oz. Bone-in Buffalo Ribeye paired with Amber Ale, Rainbow Trout paired with Stout, or Crispy Pork Shank paired with Brown Ale. We're so excited about it, we thought we'd share this rich, creamy authentic recipe with you. 

Wild Mushroom Risotto
Serves:  6

Mushrooms, sliced, 1/4 pound
Farro grain, 2 cups   
Fresh ginger, 1 oz.
Minced garlic, 1 oz.   
Minced shallot, 1 oz.
Butter, 3 oz.
Fin herbs, 1 oz.
Parmesan cheese, shaved, 2 oz.
Cream, 1 cup

For the Farro
Toast lightly in a pot with a Tablespoon olive oil, garlic, shallot and ginger. Cover with water or chicken stock and simmer for 20 to 25 minutes.

Remove from pot and spread out on a cookie sheet to cool quickly.  The Farro should be slightly al dente. Set aside the farro for later. 

Heat up a sauté pan, sauté the mushroom in the butter and a dash of olive oil until golden brown. 

Add the farro, cream and parmesan cheese to the mushrooms, reserving a little of the cheese for garnish. 

Optional Garnish ideas
Crispy Squash Blossoms and fresh herbs.  Speck or a cured or smoked pork product would always work well in this dish.
