Greetings from the craft beer cellar!

Planning is underway for several terrific events, and we're excited to share them with you!

First, and coming up next on the calendar, is our Brewmaster’s Weekend with Doug Odell, Founder/Brewmaster of Odell Brewing Company in Ft. Collins, CO. Doug and his family will be joining us for the weekend of August 17 & 18, and we’re delighted to experience some incredible Odell offerings at both our open sampling on Friday from 4–7pm in Fireside and once again for our Small Plates & Craft Beer Pairing on Saturday from 5–6:30pm in Atwater. As a sneak peak forward on our craft beer list, we will be including Odell St. Lupulin in our next draft rotation and Odell Pond Hopper will be coming onto our Large Format list soon – both tasty treats! (Myrcenary is flying out of our coolers right now!)

We will keep you posted on Doug’s selection of beers for the Small Plates Pairing and then with the Small Plates menu as soon as we have these tidbits in hand! Please remember to reserve your seats for the Small Plates event early, as we sold out last month.  Email Laura Lodge at llodge@destinationhotels.com.

Second – and planning ahead – is our first formal dinner of this Craft Beer, Creative Cuisine series. The September Brewmaster’s Weekend will host John Carlson, Executive Director of the Colorado Brewers Guild, with special guest Brewmasters from Three Barrel Brewing Co., Trinity Brewing Co., and Rockyard Brewing Co. The weekend of September 7 & 8 is reserved for these gentlemen, and it happens to also be Vail Oktoberfest Weekend. If you’re planning for the dinner, we will be starting at 6pm on Saturday evening and seating will be limited to 30 ppl. Please let us know if you need further information.

Third, and looking into next ski season, is our Thanksgiving Brewmaster’s Weekend. This will be a double Brewmaster’s Weekend with Peter Bouckaert from New Belgium Brewing Co. and Andy Brown from Wynkoop Brewing Co. We will be featuring their collaboration beer(s) this weekend, and more information will be forthcoming.

Last, we are preparing a Winter/Holiday treat for you! we have been placing orders for some amazing holiday and winter seasonal beers, and we will be very pleased to spoil you rotten with special selections from near and far.  These beers will be available to you starting on November 15th, and we’ll feature them through the Christmas and New Year’s holiday season. Once again, we'll let you know more details as we actually see the cases arriving in house. (Wouldn’t want to disappoint you if something doesn’t come in.)

Now – back to Friday Night Flights!  This week’s Friday Featured Flight ($7) will be samplers of the following beers:

  • Boulder Kinda Blue
  • Dogfish Head Festina Pêche
  • New Belgium Fat Tire
  • Dixie Blackened Voodoo
  • Left Hand Milk Stout

And we’re continuing the following beers in our current Craft Draft Flight ($7 on Fridays):

  • Bristol Laughing Lab
  • Ska Modus Hoperandi
  • Rogue Hazelnut Brown Nectar

However, we are on our last kegs of Samuel Adams Summer Ale and will be moving to Oktoberfest as early as next week. I’m not willing to relinquish summertime, but we’ll rotate our handles to more cool craft beers! The remainder of the next draft rotation will begin as kegs run through, so fun stuff will be coming your way.

Atwater Beer Buzz July 19

Greetings from the craft beer cellar!

We are pleased to be receiving some steady rain up here in the Vail Valley, and  hope it keeps coming! Playing in the water ranks right up there with hiking, camping, biking, frisbee golf, miniature golf, horseback riding, and the myriad of other fun things that we love to do.  And when you’re winding down for the day our Flights and Bites program is a great way to relax in Fireside or out on the patio.

This week has seen some amazing media coverage for our Vail Cascade Craft Beer Program! In addition to the Sunday 7/8 front page photo in the Vail Daily, there’s a wonderful article by Krista Driscoll in the Vail Daily Weekly about our Avery Brewmaster’s Weekend that was posted online on Tuesday.

The super icing on our media cake for the week is the new issue of All About Beer Magazine, which sports a full page photo of our own Executive Chef, Todd Bemis, and a six page article about his journey with craft beer beginning with the 2012 Big Beers, Belgians & Barleywines Festival Brewmasters’ Dinners and winding  up with our new Craft Beer Program at the Cascade. We are absolutely delighted to be featured in this world class publication and very much appreciate the recognition of our fantastic culinary team!

Save the date!! Remember that Doug Odell, Owner/Brewmaster of Odell Brewing in Ft. Collins, CO will be joining us on the weekend of August 17th & 18th for our next Brewmaster’s Weekend. Come by and sample Odell craft beers at your leisure on Friday the 17th in our Fireside Bar from 4 – 7pm, and make reservations for another fantastic Small Plates & Craft Beer Pairing on Saturday the 18th at 5pm. Atwater Beer Buzz July 13

Greetings from Vail Valley Summertime! 

We’re loving the summer, and being outside has never been better…by the pool, on the recreation path, on the mountain, in the river, on your bicycle and out in the wilderness. The phenomenal Bravo! concerts, Vail International Dance programs, and Vail Farmer’s Market all give even more reason to come up and enjoy! (and they’re all better with a craft beer in your hand).

We are delighted to report the our Brewmaster’s Weekend with Avery Brewing Company was outstanding. We once again had a steady crowd for our open tasting on Friday night, and we were at capacity with a waiting list for Saturday’s Small Plates & Craft Beer Pairing. The word is out, and the demand is increasing dramatically!  If you saw the Vail Daily on Sunday, you know that their staff was in attendance as well by the front page photo and another of our newlyweds on page B4. If you missed it, here’s the link to the virtual paper, and you can change the date to flip through the pages:  http://vaildaily.co.newsmemory.com/  The enthusiasm from all of the attendees was bubbling over, and the beer selections, menu & pairings were all top notch. A wonderful weekend for craft beer all around! 

Our next Brewmaster’s Weekend extravaganza will be on the weekend of August 17 & 18th, and our craft brewery guest will be Doug Odell, Founder & Brewmaster of Odell Brewing Co. in Fort Collins, CO. I will pass along further information as soon as it is available. I have already had requests for reservations for the Small Plates Pairings, and yes – you can make your reservations now if you like! 

Our Flights & Bites promotion has just gotten better: we have extended the hours, and you can now get 50% of a Small Plate of your choice when you purchase a Craft Draft Flight from 4:00–7:00pm daily!

The Destination Dish: Recipes with Corn

Destination Hotels & Resorts has challenged our chefs across the country to take part in The Destination Dish. Each month, Destination Hotels & Resorts selects one ingredient and each chef must create a recipe using the chosen ingredient and feature it in their menu that month.  This month, the featured ingredient is corn.  

Vail Cascade, a Vail mountain resort offering spacious guestrooms and premium condominium rentals in Vail, is pleased to feature this mouth-watering dish, Goat Cheese Tamales created by Jay Spickelmier, Chef at our Vail Colorado restaurant Atwater on Gore Creek.  This dish is sure to enliven your taste buds!

Tamales
2.5 # Masa Flour (Corn Flour)
1 Qt Lard
1.5 Qt Chicken stock
1 tbsp Salt
1.5 tbsp Baking powder
1 # soft goat cheese
1 bag Banana leaf or rehydrated corn husk 

Tomatillo Salsa:

This is based off a 40 # case so scale it down.

RECIPE DIRECTIONS

Tamales:

Boil stock and pour it over the flour and lard, mix well and press about 3 oz to the sectioned off banana leaves, cut into 4 inch * 6 to 8 inch sections.  Place a small log of the goat cheese in the middle of the tamale and form the masa dough all the way around the cheese to seal it in the tamale.  Place in stove top steamer for about 20 to 30 minutes depending on thickness and steam intensity. 

Sauce:
Peel and wash the tomatillos and char. Seed the jalapenos and poblanos and char well. Peel the skins off the onion and garlic and char. (everything on roasting racks a top of the grill). Add butter to steam kettle and melt.  Add all charred items to butter.  Add the honey and chicken base. Cook for ten minutes. Add cilantro and puree with beurre mixer. Season with salt and pepper, and cool. 

Optional Garnish Ideas: 
Try Asparagus, roasted tomato and orchid flowers for optional garnish.

Atwater Beer Buzz July 5th

Happy Independence Week!

We hope everyone enjoyed some red, white and blue spirit on the 4th! We’ve got the bbq grill going by the pool, festivities going on just down the path in Vail Village, spectacular hiking, biking, fishing, tubing…you name it. And when the day slows down we’re featuring Craft Beer Flights & Bites in the Fireside Bar from 4 – 6pm. It’s the perfect way to chill out -  with a Craft Draft Flight and 50% off of the delicious small plate of your choice.

  • To finish off the holiday week in style, we’re excited to welcome Matt Thrall, Head Brewer at Avery Brewing Company in Boulder, CO  for our Avery Brewmaster’s Weekend! Our first event is the Meet and Greet in Fireside Bar from 4 – 7pm on Friday afternoon, and it’s a complimentary sampling opportunity open to the public. Join us to soak up the holiday, visit with Matt and the Avery team, and taste the treats that they are bringing to share. Rumor has it that there will be a couple of special bottles coming from the infamous Avery cellar…

The festivities begin at 5pm, and the show usually lasts between 1 & 1 ½ hours. Executive Chef Todd Bemis & his team will be talking food & pairing inspiration as each course comes out, and Matt Thrall will be talking about each Avery beer as it’s served. It’s going to be one of those ‘perfect storm’ food & craft beer pairings, and you owe it to yourself to be here!

In other craft beer news, last week saw our first large conference event with craft beer, and it was quite successful! We had 250 doctors in from around the country, and they chose to have a craft beer reception to wrap up their meetings on Friday. This is the first time our banquet staff has worked with our craft beer program, and they were excited to learn more about what craft beer can be at the Vail Cascade. I’m optimistic that this will lead to more conference business for the program, and have proposed several different formats for these events in house. 

New on the Vail Cascade Craft Beer list this week are:

  • Boulder Beer Kinda Blue, a filtered American Wheat with muted tones of blueberry (and)
  • Avery White Rascal, an authentic Belgian style white ale with coriander and Curacao orange peel

This week’s Friday Night Flights will be happening in conjunction with the Avery Brewmaster’s Weekend on Friday!

In addition to Avery White Rascal and Avery IPA specials all weekend, they are jumping into Friday Night Flights as well.
