Combining creative cuisine with craft beer is elevating Atwater on Gore Creek and putting the Vail restaurant on the map as a top place for Vail Colorado dining experiences.

Atwater's Dessert & Beer Pairing, "Top Desserts of 2011"

For all of you with a sweet tooth and an appetite for adventure, check out Atwater on Gore Creek's new line up of tasting treats and savory sweets, all perfected paired with craft beer. Yes, that's right. We're taking indulgences to a whole new level....and we just received validation that we're on the right track.....

With one of the best restaurant's in Vail, Vail Cascade had the privilege of having Jenny from Sugarloco with us at Atwater on Gore Creek to sample some of our favorite new desserts. Check out her "Top Sweets & Desserts from 2011", which includes our new White Chocolate Cheesecake paired with the Unibroue La Fin du Monde.

What's the Dish?

Destination® Hotels & Resorts has challenged our chefs across the country to take part in The Destination Dish. Each month Destination Hotels & Resorts will select one ingredient; each chef must create a recipe around the chosen ingredient and incorporate it into their restaurant menu that month. The ingredient changes every month, so do the menu items.

Perfect Recipe for A Winter Appetite

Warm your soul after a day on the slopes with a hot bowl of Chicken Green Chili. Check out Atwater on Gore Creek's take on a classic recipe, only available at Vail Cascade Resort.  

Recipe ingredients include:

  • Marinated grilled chicken
  • Vegetables
  • Green chilis
  • Cotija cheese
  • Black bean pico de gallo
  • Grilled flour tortilla

Interesting facts about these ingredients:

  • Cotija is a hard cow's milk cheese that originated from Mexico. It is named after the town of Cotija, Michoacán. Cotija comes in two primary versions. El Queso Cotija de Montaña or "grain cheese" is dry and firm, with little taste beyond salt (the cheese is usually several times saltier than typical cheese, traditionally for preservative reasons). "Tajo Cheese" is a moister, fattier, and less salty version of the cheese that holds its shape when cut, with a flavor similar to Italian Parmesan and Greek Feta.
  • In Mexican cuisine, pico de gallo (Spanish pronunciation: rooster's beak), also called salsa fresca, is a fresh, uncooked condiment made from chopped tomato, white onion, and chilies (typically jalapeños or serranos). Other ingredients may also be added, such as lime juice and/or apple cider vinegar, fresh cilantro (coriander leaf), cucumber, radish or firm fruit such as mango.
