Atwater Beer Buzz November 17

Greetings!

Officially 13" of snow has fallen in the last 24 hours, and I would say that I have shoveled at least 30" of snow this week. It's extra cool because it's the light, dry powder, which makes me want to be up on the mountain! Not as good for snowmen, perhaps, but with 30" you can make a really good snowman no matter what the snow is like. It's going to be a fantastic opening weekend!

The culinary team is really excited for this Brewmaster's Weekend because they got to taste and create a Small Plates pairing for an Avery beer that was just released today. Tweak is Mephistopheles Stout from the Avery "Demons of Ale" Series with a ton of coffee added, and then aged in bourbon barrels for 4 months. It's going to be a special treat for everyone attending next weekend's event!

A brief recap for this coming weekend's event:

Friday from 4 - 7pm in Fireside Bar will be Meet the Brewmaster with Avery's Head Brewer and Production Manager, Matt "Truck" Thrall. Truck and his team will be pouring a selection of Avery beers and are available to visit about craft beer for the duration. This is a complimentary event, so feel free to stop by at any point to visit and try a couple of their beers.

Saturday is the Small Plates & Craft Beer Pairing event in Atwater on Gore Creek. The culinary team will tag team as your tour guides with Truck for an exclusive walk through four Avery beers and small plates created especially for this event. Seating is at 6pm and the event is $35/person. We suggest reservations in advance to hold your seats. There are already several advance reservations on the books.

To reserve your seats, you can either email Laura or call the Vail Cascade at 970.479-7014. If you're able to come at the last minute, please call rather than emailing, as I will be setting up for the event and am likely to miss your email.

We are currently dialing in the Avery special for the weekend, but please know that there will certainly be one available. I'd like to be able to offer a little bit of Avery holiday cheer, so will leave the exact selection as a mystery for now.

Vail Cascade always offers complimentary valet parking for Fireside Bar and Atwater on Gore Creek guests. This is especially good to know when it's snowing and ski season. We won't let parking challenges get in the way of Brewmaster's Weekend!

Atwater Beer Buzz November 10

Greetings!

Between the fall season, Thanksgiving, and Christmas holiday specials, all focus seems to be on flavor at the moment. Big flavors and comfort food. At Vail Cascade, we're talking about big flavors as well - and we're talking beer... Avery Brewing Co. beers, specifically.

Avery Brewmaster's Weekend is coming up quickly, November 21 and 22!  Put it on your calendar, and plan to come up and join us for some amazing food, craft beer and fun. Matt "Truck" Thrall, Head Brewer for Avery, will be bringing his crazy gang with him for his second Vail Cascade Brewmaster's Weekend.

Opening the weekend will be "Meet the Brewmaster" from 4-7pm on Friday evening in Fireside Bar. Truck and his team will be pouring some fun and festive beers while visiting with everyone, and you can join  the party at any time free of charge.

The Small Plates & Craft Beer portion of the weekend will be held on Saturday in Atwater on Gore Creek beginning at 6pm. This is a guided tour, led by Truck and the Vail Cascade culinary team. Hear about the history of Avery, the specific background of each beer offered, the inspiration behind the dishes created specifically to pair with each of the beers presented, and learn how the food was prepared. Four small plates are paired with four Avery beers, and we have that beer list for you now:

  • Avery Kaiser Imperial Oktoberfest
  • Avery Dugana Double IPA
  • Avery PumpKYn, Bourbon Barrel Aged Pumpkin Porter
  • Avery Tweak = Mephistopheles + Coffee + 4 months in Bourbon Barrels

That's a top shelf list, and Tweak hasn't even been officially released yet!  We sat down for the menu development tasting this afternoon, and I can promise you a delicious adventure through these beers. The menu is coming soon, and I'll send it out as soon as I have it.

The Small Plates & Craft Beer Pairing event is $35/person, and reservations can be made either by emailing Laura or by calling Atwater on Gore Creek at 970.479-7014.

Meet Atwater on Gore Creek’s Team of Culinary Professionals

The Team Chris Bates, Executive Chef With more than 25 years in the culinary industry, with restaurant, catering and hotel experience, Chris Bates is serving up more than the average dish.  Chris Bates was promoted from sous chef to executive chef in 2014. In this position, Executive Chef Chris Bates oversees all culinary operations for our AAA Four Diamond resort, including banquets, Atwater on Gore Creek, The Market Cafe, poolside and in-room service and offsite group and event functions. Chris Bates is culinary maverick with the business skills necessary to lead and inspire his team.

Jay Spickelmier, Chef d’ Cuisine As a Chef and Artisan Food Designer with an eye for innovation and culinary precision, Jay Spickelmier pulls from his life and work experience with worldly cuisine to deliver the best possible dining experience possible. Having worked at some of the best restaurants in the Vail Valley, Chef Jay Spickelmier’s creativity and culinary knowledge is invaluable. The cumulative skills and experiences he's garnered in culinary arts, catering, consulting, competition, and customer service have helped him grow into a culinary leader committed to creating a positive work environment for like-minded culinary enthusiasts.

Adam Smith, Sous Chef Adam Smith arrived in Vail in 2006 spending his first 3-1/2 years at The Left Bank learning and perfecting his knowledge of French cuisine. During this time he fell in love with the pastry kitchen and found himself the pastry chef before leaving for France in 2009. He has worked at restaurants in France and spent time at the famous Ecole Lenôtre in Paris, studying with some of the most famous names in pastry. Adam returned to the Vail Valley and spent time at some of the fine dining establishments as sous-chef and pastry chef before arriving at Vail Cascade in the fall of 2011. Since joining the Cascade family, Chef Adam Smith has been instrumental in the development of Atwater on Gore Creek, and in all aspects of its operation.

Jonathan Seidt, Director of Banquets and Outlets Jonathan Seidt was promoted and expanded his role from Director of banquets to Director of Banquets and Outlets. As a full-service resort with 45,000 square feet of indoor and outdoor function space, the Vail Cascade Resort, is a venue of choice for special events, weddings and group meetings. In this role, Jonathan is responsible for working with his team to deliver the attention to detail, service and capabilities to ensure every event is flawlessly executed. As Director, Jonathan has taken a more active role in budgeting, forecasting, and working closely with management to explore new practices to make staff as efficient as possible.

Vail Cascade Thanks Our Troops with a Free Meal for Veteran's Day

The U.S. Armed Forces is considered one of the world's largest militaries, comprised of countless service men and women that dedicate their lives to serve and protect the red, white and blue. To show gratitude for their fearless contributions, Vail Cascade’s Managing Director, John Garth, invites all active and retired service personnel to enjoy a free dinner entrée on Monday, November 10 or a free breakfast, lunch or dinner entrée on Tuesday, November 11 in Atwater on Gore Creek, our signature restaurant.

Soldiers know firsthand that a home cooked meal is hard to come by when deployed. While the Vail Cascade cannot singlehandedly make up for the number of missed meals, we aims to do our part to narrow the margin, one meal at a time. 

“Our nation is a beacon of freedom thanks to the millions of men and women who have fought and continue to fight to protect our rights, liberties and independence,” said John Garth. “We are eternally grateful for their years of service and look forward to now serving them at our hotel on Veteran's Day."
